Urad dal ki khasta kachori



Ingredients

2 servings
  1. 1 cup soaked urad dal
  2. 250 gm maida
  3. 1 tbsp çumin seeds
  4. 1 Tsp fennal seeds
  5. 1 Tsp coriander seeds
  6. 1 Tsp Asffodita
  7. 1 Tsp red chilli powder
  8. 1 Tsp Ajwain
  9. 2 Tsp gram flour roasted
  10. 1 Tsp mango powder
  11. 1 Tsp chopped chilli green
  12. 2 Tsp coriander leaf
  13. 1 Tsp ginger crushed
  14. to taste Salt
  15. as needed Oil for frying
  16. 80 gm ghee for shortening

Steps

  1. Take a bowl put maida gram flour,salt,cumin seeds,baking powder,ghee rub it 8 miniutes.
     
     
  2. It will be light brown.
     
     
  3. Add some water knead it well.keep it a side for rest 10 mimiutes.
     
     
  4. In mixture griender add soaked Dal,2 clove garlic,1 pinch cumin.griend it coarsely.
     
     
  5. Take a pan put ghee in it,let it hot.add çumin cracle it.
     
     
  6. Add ginger,green chillies,saute it.
     
     
  7. Add griended Dal.
     
     
  8. Fry it till some dry.when it gets roasted, it will release a beautiful aroma.
     
     
  9. Add all dry griended spices.
     
     
  10. Whole spices should be first roasted then coarsely griended.
     
     
  11. Then add it in dal.mix it very well.keep it inside.
     
     
  12. Make balls from the dough.roll it out.
     
     
  13. Fill fried Dal in it.roll it again. Make medium thick circle from this.
     
     
  14. Heat the oil,keep it in slow flame.put rolled kachori in it.
     
     
  15. Now keep it in medium flame.
     
     
  16. Fry it till crispy.
     
     
  17. Remove it from the flame.
     
     
  18. Serve it hot - hot with green chuteny & curd.
