Kasuri Mutton Masala - Black gram urad dal

Ingredients

  1. 500 gms mutton on bones, cubed
  2. to taste salt
  3. 1/2 tsp turmeric powder
  4. 1 tbsp red chilli flakes
  5. 1 tbsp roasted coriander-cumin powder
  6. 1 tsp garam masala powder
  7. 1 tbsp ginger-garlic paste
  8. 2-3 tbsp oil
  9. 3 green cardamoms
  10. 2 star anise
  11. 6 cloves
  12. 1 " cinnamon
  13. 3 large onion, sliced
  14. 2 large tomatoes, chopped
  15. 1 tsp sugar (opt)
  16. 1 tsp. red chilli powder
  17. 1/4 cup kasoori methi (dry fenugreek leaves), crushed
  18. 1 tbsp ghee
  19. 1/2 cup cream

Steps

  1. Marinate the mutton with the ingredients starting from salt to ginger-garlic paste for 2-3 hours.
     
     
  2. Temper the oil with cardamoms, cloves, cinnamon and star anise. Add the onion and saute till light brown.
     
     
  3. Add the marinated mutton and saute till dry.
     
     
  4. Add the tomatoes and sugar and continue to fry till dry.
     
     
  5. Then add the kasuri methi and mix well.
     
     
  6. Add 1 & 1/2 cups water & pressure cook for 20-25 minutes on low flame after the first whistle.
     
     
  7. Heat ghee in a pan & add the red chilli powder followed by the prepared mutton. Simmer for 5 minutes till the gravy is slightly reduced.Add cream and mix well.
     
     
  8. Serve as a main course with either rice or any Indian bread.
